Here's a list of what "most" folks are using on their VE's. The options available are many and assorted, so this only represents a small segment of what you can use.
Lets start with the servos...the VE needs to kept as light as possible for best performance and one area that can help that a bunch is servo selection. The stock frames are cut for standard servos but you can generally do better with a set of 3 Hitec HS85's on the swash and an HS 81 for the tail. These will save quite a bit of weight and they perform very well. The HS 81 is almost as fast as some of the digitals and far less expensive.
For gyros, there are several options. My first was a JR 460T which worked OK and was fairly cheap. I now use (as do a large number of folks) the Futaba GY240. With the 240, you'll need to make a simple mounting plate to mount it behind the main mast on top of the frame, as it doesn't play well in the stock location (lots of glitching from the motor). I'm sure there are others that work equally as well but for a budget priced gyro, the 240 is hard to beat.
TX and RX are up to you...some like Futaba and some like JR. In my humble opinion the new JR 6102 is looking pretty good (at a very reasonable price) and it is CCPM capable which you'll need with the VE.
Other things to consider...if you're going to use the stock motor and ESC, use an 8 cell battery. The VE will fly pretty well with that, but with the recommended 7 cell pack it struggles to get airborne at all. No matter what batteries you use, get a good charger. It will keep your batts fresh and strong. Also consider a set of carbon fiber frames...they make mounting the Hitec servos easier and also help with the weight issue.
