Will the stock motor and esc handle a lithium 3 cell at 11.1v?

The stock controller is only supposed to handle 8.4v, (7 cells). Most people will use 9.6v (8 cells) for that little extra power and flight time (like I did for a while.) But you can blow the stock esc with that. So I'm pretty sure that 11.1v lithium would just blow up. Not to mention, that I think the BEC in the controller might fry your receiver and servos, cause it's not supposed to handle that much more power. I wouldn't advise getting a lithium until you upgrade to brushless first. I've got the Astroflight brushless, and I'm saving for a lithium.

If my wife finds out how much these things cost, she's gonna kill me!!!

Right.
I use a very light li setup on my VE with hacker C40 12S. AUW is only 1350g with a 3S4P Irate 850, giving 14 minutes flight.
Good thing is that I use the same packs on my planes.

a 3S4P Irate 850mA gives me 3400 mA.
Controller is an old Kontronik 3SL 6-12-25
With a hacker C40 12S and 15T, it only draws around 15A.
