| Due to the way brushless motors work and the interaction between the ESC and the motor, it is possible for the ESC to act as a governor just like a governor on a nitro bird. Having a governor mode allows you to set your head speed once and forget about it and eliminates messing with throttle curves and mixes.
Once you've set your head speed, the ESC tries to the physical limits of the motor/battery/gearing setup to maintain that RPM. It makes for very consistent head speeds across battery packs and through most of the pack if setup properly.
If you use standard throttle mode and throttle curves, your head speed will decrease as the battery pack voltage decreases. That being said, some folks have found that using a standard throttle mode on the ESC has benefits of lower ESC and motor temps and longer flight times.
