Ok, explain why you need them... hmm... deap breath..... here we go.
If you set up your heli for only one mode, normal (throttle 0, 25, 50, 75, 100 with pitch being -5 to +9), with the throttle at idle at low stick, then it makes it hard to do some things like nice big loops and stuff. You need to be able to have a mirrored setup EXCEPT have the lowest point stay at like 30% throttle so when you go through the top of that loop you can carry it over the top at -4 pitch and 30% throttle to make a nice round loop. Hence IdleUp1. (throttle 30, 25, 50, 75, 100 with pitch being -5, to +9)
Ok, so now you want to try your hand at inverted hovering, inverted flight, 3D stuff, etc. Now you have another problem, because 30% at low stick is not enough power and your low stick pitch is probably at between 0 and negative 5. So.... You need to now be able to have the lower half of the throttle stick directly mirror the upper half. This would give you 100% throttle and -9 or so at low stick and +9 at full stick. Hence IdleUp2. (throttle 100, 75, 50, 75, 100 with pitch being -9, -5, 0, 5, 9)
Now, you can fly your butt of and you want to try practicing auto's. SO you need the ability to disengage the engine from the left stick and send it to idle, and give you -5 to MAX pitch at top stick. Hence throttle hold or IdleUp3.
If you only have the ability on your radio to have 1 mode you could set up only a mode like IdleUp2, but then you have a tendancy to overspeed during decents. I hope this makes more sense now. Sometimes I don't explain things well, but I think i got this one laid out decent. If you are just starting to learn hovering, forget all this stuff for now. You will understand why you need it when you want to do it.
