I am a beginner too and prob have as many questions as you, but to save the real experts some time I'll tell you what I know and they can correct and add to it. I prob would be better at blatant explanations because I have just gone through it.

I don't know bout other gyros, but I have the telebee and for it when it is in heading hold mode (if you have an aux channel and have it plugged in, otherwise the gain is controlled by a screw switch on the sensor) the ATV on the the rudder channel (4) controls the pyrouting (whatever spelling, i dunno) rate and the ATV on the auxilary channel (for me 5) controls the gain. I wasn't sure either at first, but you have to trim the gyro out. Trimming on the rudder channel will stop the heli from rotating at mid stick. If you have training gear, it makes it easier, put it on cement and at you start to lift off notice which way it wants to go. You will have to check which direction add + or - trim will affect the spinning of the tail. Bring it into a hover and at mid stick (left and right wize, it doesn't matter where on the up or down of your throttle it is (make sure you have revolution mixing and any other types of mixing off)) the heli should hold its heading. If its rotating a little, add negative or positive until it stays centered in a hover. Its actually pretty easy to set up. Normal is a little different, and I never use it. But, most likely you should use revolution mixing with it and the trims do the same thing as you would expect on that one, regular is pretty much self explanitory.

As far I Strim for the aux channel, I am not quite sure myself, I just asked the question. I think below a certain position, it is heading hold and the other end would be regular.

you should trim the tail by adjusting the tail control rod instead of using the digital trims. If you do use the trim, the servo will no longer be centered in order for the heli to remain still. What happens is that for an extreme example you trim the rudder full right just to get it to stop a left piro, you no longer have any throw remaining on the servo to turn your heli to the right. So, if you need to trim the heli because it is pirouetting to the left, you should turn the links in to shorten the tail control rod. If it is going to the right, you should loosen the links on the control rod to lengthen the rod. Just watch how the rod moves and you'll understand. If you want to turn right, the rod moves toward the front of the heli. So, if your heli is pirouetting left, you shorten the rod to give a right input without giving an input on your transmitter. Just keep adjusting the rod by 1/2 turns till your heli is stable.
