how can you test a sensor before installation?

connect it to the carb smart and apply a heat source to the sensor( flame from a lighter) and watch the servo move as the sensor encounters the heat source. As the heat source moves away there will be further servo movement.

More days at home would be nice!

You set the servo direction when you set the end points, one is the lean position the other is the rich position. I can't remember which you set first but that sets the servo direction the servo will travel. I explains in the manual which one you set first.

To reset, Hold the button down on the carbsmart while you are turning on your heli receiver. After the receiver is working, let go of the button. Turn the pot on the carbsmart in whichever direction gives you your leanest position. When the servo is at your 'lean' setting, push the carbsmart button and release it. Then turn the pot the opposite way to adjust the servo to your 'rich' position. When the servo is at 'rich', push and release the carbsmart button again. Turn off your receiver, now it's programmed. Turn on the receiver and then set the temperature you want by pushing and releasing the carbsmart button as many times as you need to to get to the temp you want. Remember, if there is NO temperature light lit, it means you're at 90* C, and pushing the button once more will light up the 100* C light. Turn the pot, which is now serving as a 'gain' adjustment, to the middle of its range, and you're done for now. You can adjust the gain if you need to later. Read the directions...

i did read the directions i was just clearing up some unsure points I did all that. If I set my gain to middle the servo just sits at mid stick. So i have to turn it up to get it to move.

At mid gain the servo should move to the max lean position until the engine is up to the temperature set It just won't be as sensitive to temperature changes as if it was set to max. If it is in the center with the gain set to the middle your sensor may have failed. That is so it will go to a safe setting if the sensor fails in flight.

That doesn't sound right to me. If the engine is off, and the receiver is on, and the servo is in the middle of its travel, it tells me that the temperature sensor is not working. Is the Sensor Light lit? Under normal circumstances, when you start up, the servo will be at full lean because the engine if cold. If you remove the sensor wire from the carbsmart, the servo will move to its center position. With the sensor plugged in and working properly, the servo should be fully lean. Pushing the carbsmart button will cause the servo to cycle to the full rich position. Releasing the button will move the servo back to lean, and the temperature indicator will have increased by one step. If yours isn't working that way, there is something wrong IMO.

When mounting a thermal sensor, the 'closer the better'. Epoxy, even so-called 'thermal epoxy', is not all that great a heat conductor. It is much better than air - about the most you can say about it.
In mounting this sensor, I would advise (gently) clamping it to the surface you're trying to measure, after applying the glue. Try to keep the thickness of glue between the sensor & surface to an absolute minmum. If needed, apply a 2nd coat over top for support & protection.

Never underestimate the power of very stupid people in large groups.
