I'm impressed that the ESC has held up under the 8S particularly since, if the lipo's getting hot, then you are pulling some hefty amps.
Did you consider running the throttle curve a bit lower? I don't really recommend it though, as the ESC would just have to work all the harder. Maybe an external governor like the Aerospire E- multigov?
Anyhow, moving on to an 8S motor and different ESC might just be the best alternative.
