After charging my batteries and I don't fly for a week does the battery still keeep their full charge or do I need to recahgre them just before I fly.Also during the winter months is there something I need to do with the batteirs if I don't fly during the winter.

Once you charge them, Don't charge again! Every time you charge and discharge them you are using them up, meaning that is one less cycle that batt. pack will have. Lipos really don't discharge sitting.

If you gonna store them longer then a few weeks DO DISCHARGE THEM TO 50%, they take damage if they stored fully charged!

Discharging at slow rate does very minimal damage nothing to worry about.

Best practice for longest life is:

Fly
Charge to 50%
Store.
At the day or day before next flight charge the rest.

11.1 volts is 50% for a 3S pack.

(12.6V is fully charged)

(9.3V is discharged).

It's not linear - you need a discharge chart to get any values in between.

3.9v/cell is 60% for Hyperion packs which is what the charges take them to when in Store Mode.
