| The 25C is what the battery is capable of supplying if required. Not important if your motor is only "asking" for 50Amps (or 10C on a 5000mA pack).
Your 75A esc is again capable of controlling/supplying up to 75A through it. But your motor needs to "ask" for it first. Basic sport flying will only pull 20-50 amps. When 3D flying, the motor will pull more than that as they are pushing the blades harder.
I hope that helps. I don't fly 3D but use the Trex-600 for photography work. I rarely hit 50Amps draw and have over 200 flights across two 75A-esc's.
