I'm wondering if I can set the esc for a specific cutoff or is it pre-programmed? Also, if the esc will cut before or at 80% discharge why do I need to time this to make sure the lipos do not discharge beyond 80%? Cant I just trust the esc to let me know?

Because if you use the low voltage cut off and it cuts off in the middle of a manuever, you may crash.
Timer and low voltage alarm combo is MUCH safer.
