I finally finished my knight, however when I installed the main blades there is a good size gap. I do believe it’s not a good idea to tighten the bolt down to squeeze the grip down to the blade right? So are there any spacers that I could but and where?

what you use are called blades spacers, many times the spacers come with blades when bought. most of the time the spacers are 1mm thick and 1 or 2 are used on the top and bottom of the blade when it is mounted. not sure where you can get just the spacers, you could ask around on rr to see if any one has any, i may have extras as well.

M4 steel 'penny' washers should sufice, it's all I use on my Knight.
You'll get these from your local hardware store.
