What kind of radio do you have? That will help greatly with setting up the channels properly. Also, are you using the mechanical collective or the electronic ccpm servo setup?
Left stick up and down is for throttle and blade pitch, a.k.a. collective.
Left stick left and right is for pointing the nose, a.k.a. yaw. Try not to think of it in terms of the tail, instead concentrate on where the nose is pointing.
Right stick up and down is for nose up and down, a.k.a. elevator. Right stick left and right is for sideways roll, a.k.a. aileron.
The right stick is commonly known as the cyclic, the left is collective.
There should be a toggle switch in the upper left corner, that's the flight mode switch that swtiches from normal mode to idle up.
Normal mode is a throttle curve setting that goes from zero to 100% in a linear fashion. Good for spooling up and building head speed until you can switch it into idle up.
Idle up is sometimes called stunt mode in the manuals. It's a good flight mode to fly in regardless of stunt flying, as it holds the head speed more constant than normal mode, most especially when you have the left stick at half or less. Some radios have three positions on this toggle switch for Normal, idle up 1 and idle up 2.
There should be a toggle switch on the upper right corner for throttle hold. This backs the throttle down to idle in nitro helis and usually off in electrics.
