I dont think this issue have with the canopy to do, I think its more of a question of rotorhead design. Myself and a buddy have done a bit of experimenting regarding this problem and we have found out that some rotorheads are more prone to be unstable when hovering tail into the wind. An example: My buddys Eagle 3 with the original SSR-7 head had severe unstability problems when hovering tail into the wind, then he changed the rotorhead to the SSZ-II head and the problem was reduced by, lets say 80%. We have also found out that the FFZ-II head (plastic version of the SSZ-II) is even more stable than the SSZ-II head when hovering tail into the wind (thats why I´m running a FFZ-II head on my FAI machine). On the other hand, the SSR-7 head works muck better than the **Z-II heads in the flight manouvers, and that can be intresting now when the K-Factors are removed.
