| It DependsI think it really depends on how you set it up. Just because the power is there doesn't mean you have to use all of it at first. You could limit yourself to a blade angle of, say, 8 degrees until you're more comfortable with a touchy collective. Obviously, the more pitch you have, the more blade angle change you'll have per millimeter of collective movement. You can't expand the throw of you're transmitter's collective!!!
As for me, I'm going to 11 degrees of pitch, even in normal mode, and I hover at 3/4 stick, so it's even more touchy, and I haven't had any problems.
As far as the stability of the machine, it actually increases, due to the larger rotor disk and increased weight.
I don't know what level you're at, but the .50 does burn substantially more fuel. If you're still learning hovering, etc... i'd stick with the .30 for now... after all, you paid for it! When you start doing 3D, you may decide you need a little more oomph, and the .50 will give you a LOT more oomph!
